SPICY CHICKEN
2 cups couscous
1 foil pack chicken (12 oz total)
4 tblspn onion flakes
2 tsp garlic powder
28 oz crushed tomatoes or 1 small can tomato paste
4 oz diced green chiles (1 small can)
1 tblspn chili powder
1/4 tsp cayenne pepper
1/2 tsp salt
1/2 cup grated cheese (any)
Mince the chicken, mix the first 9 ingredients in the pot. Add 2 1/2 cups water, bring to a boil while stirring. Remove from heat, cover, let stand for 5 minutes. Stir in the cheese.
Serves 6.
Adding some dried fruit such as raisins, chopped apricots, or even apples adds some sweetness that contrasts nicely with the spicyness.
This can be made ahead and dehydrated. The dried meal will half-fill a 1 gallon Zip-loc bag.
