I have multiple positions, but only one shirt. I change the epaulets depending on the position in which I am currently serving. I leave the SM path and troop number on all the time. I've never had anyone question it. At different times I have worn my SM patch and troop number with Blue, Red, Orange, Green, and Silver epaulets. I don't have any gold epaulets yet, but I could wear those too.
I have even worn multiple colors at the same time before, and never had a complaint. (although I don't think it would look good to wear all six colors at once).
I had a Chapter Advisor when I was young who used to wear rainbow epaulets (before rainbows had other meanings). That way he always had the right color on, no matter which position he was currently acting in.
Officially, the epaulet color should match with your position and unit number, but the uniform police seem to be pretty lax in enforcement on this particular rule.
